Another recipe that is 24 Day Challenge approved. I found this recipe on SparkRecipes. Perfect low carb meal for dinner. Let me know what you think!  Introduction A fast, low-calorie meal that satisfies! Minutes to Prepare: 10 Minutes to Cook: 20 Number of Servings: 10   Ingredients 1 lb. ground turkey, 93% Lean 1 green pepper, chopped (*** I prefer Red Bell Pepper) 1 onion, chopped 1 cup carrots, chopped (I diced them thin because I don’t like crunchy carrots in my food. Allows them to cook better) 1/2 cup zucchini squash, diced 1/2 cup summer squash, diced 2 T. olive oil 2T. Soy Sauce, low sodium (*** I use Braggs Liquid Aminos) 1 t. salt or season to taste 1/2 t. black pepper 1/2 t. curry powder 1/2 t. garlic powder 10 large lettuce leaves (*** I prefer Butter Lettuce Leaves) Directions Combine turkey, olive oil, onion, carrots, green pepper, zucchini squash & summer squash in large skillet. Keep stirring and chopping up the chunks of turkey until small pieces remain. Add salt, black pepper, curry, garlic powder and soy sauce. Continue cooking until vegtables are all tender. Here’s a yummy 24 Day Challenge Meal. Meal plans do NOT have to be bland. Get creative! Description: This is a SUPER easy meal that can be cooked in a crock-pot or rice cooker. I used a rice cooker. I will be eating this with carbs for lunch and lower carbs for dinner. Ingredients: Low Sodium Taco Seasoning 2.5 lbs of Chicken Breast with Rib Meat; Boneless & Skinless 2-2.5 cups of Low Sodium Chicken Broth Directions: Before adding the chicken to the rice cooker, I poured 2-2.5 cups of low sodium chicken broth. Mixed taco seasoning into the broth. Then added the chicken and cooked for 3-4 hours or 7-8 hours on low in the Crock-Pot. That’s it!!! If possible, Shred the chicken 1 hour before its finished. This allows the juices to soak into the chicken easier. When finished, the chicken will just fall apart. ***I will now make chicken on a salad, chicken tacos, chicken and veggies, chicken omelets, anything you can dream of! Like I said… Be creative! Golabki I was inspire to cook this dish because my husband is Polish. Last year we took our little family out to a local church to attend the Polish festival. We all had a great time! I really liked trying all the new foods. My favorite was the Golabki. I decided to make it for the first time tonight. I read a few recipes and kind did my own thing by combining a few of them together and adding healthier/leaner ingredients. It turned out very tasty!! We will be making this recipe again. I hope you guys enjoy it as much as we did!   Description: Cabbage rolls stuffed with lean ground beef, brown rice, onions and other tasty spices. Then simmered in tomato soup. Ingredients: 1 Can of Low Sodium Tomato Soup (26 oz) 2 Cans of Water (use same container as the soup) 1/2 cup (before cooked) of Brown Instant Rice (you can use regular brown rice) 1 head of Green Cabbage, Cored 1 large Onion, Chopped 1 pound of 93/7 Lean Ground Beef 1 egg 1 Tablespoon of Butter 1 Tablespoon of Olive Oil 1 teaspoon of Minced Garlic 1 teaspoon of salt 1 teaspoon of pepper (you can use less, I just love pepper!) Directions: Preheat Oven at 350 F To get everything setup, Start Boiling the water for the brown rice and for the cabbage. Cook brown rice according to the directions on the box (about 10 minutes).
